Hopefully the cattle will not become infected with E. coli O157:H7 which will breed inside them as a reservoir and the cattle will not show symptoms of infection. The meat and everything that would be fertilized with the manure would be potentially dangerous to humans.

I suppose "organic" would mean just letting them stay in the pasture without interference until they are big enough to eat. I would guess the beef would be much more expensive as it takes a long time for a calf to be big enough to butcher without supplementing its diet with some sort of grain product. We butcher our own beef and even though we do not give any of our calves growth hormones or antibiotics, we still feed them out with corn to get them big enough to eat. I really don't understand what the big deal is with feeding them grains. It is a natural feed, not anything that will harm them or a human. If excess fat is a concern, just trim it off like I do. I can see the concerns with hormones and antibiotics. Though I have to admit I don't think I have ever had "just grass fed beef" I suspect it would be a little tougher than grain fed just because the calf would be older and the marbling (fat) in grain fed beef is what helps it be tender.

u dont "raise" organic cattle. just feed them fresh food that wasnt grown with chemicals etc and plenty of exercise.

grass fed free range is the easiest. No hormone implants to make them grow, no antibiotics. Grass fed beef is becoming more popular as it is healthier (less fat) but still most tastes run to the feedlot style beef that is marbled with fat. .
