I have looked for an art & craft shop when visiting a trade show at the NEC. I found a couple of reasonably good stationers but nothing else at all. Couldn't much outside the city centre either when I searched online.

Suggest your daughter waits till she gets to college. There is usually at least one good shop near colleges.

If you are looking for art materials there is one in Corporation Street near the roundabout with the Tony Hancock figure almost opposite Tescos. There is another, I believe, in Fletchers Walk which is a small walkway opposite the Athens restaurant near the Town hall.
