Within reason, the longer you can wait, the more established the root system becomes. However, letting it get too high before cutting will result in more harm than good. When your new grass gets a little over 3" high it is OK to cut it for the first time. Set your mower to cut it at 3" for the first couple of times you cut it. The object is to just take a half inch or so off the top. After the third or fourth cutting, you can lower your mower to 2 1/2" without harming your lawn. I'm assuming solid sod - it's about ready. Do your grass a favor and mow
at the highest setting on your mower. The benefits are too numerous to
list here

Till you need a high setting for the first cut and normal for a second cut.
