I remember the Janis Joplin version first, so I don't know if she was the original one who recorded it or not. I also remember a version by Dusty Springfield. In researching this, it looks like Bettye Lavette did it also, but not until 1970. Faith Hill has re-recorded this a while back. Joss Stone performed it at the Grammies in 2005 but admitted that no one will be able to do to this song what Janis Joplin has.

The original version of "Piece of My Heart" was recorded by Aretha Franklin's sister Erma Franklin in 1967. The song was a US top 10 R&B hit and #62 hit on the US pop charts. However, in the UK, the actual single was not released until 1992, where it peaked inside the UK top 10 at #9.
The song became more popular, however, when recorded by Big Brother and The Holding Company in 1968, with lead vocals from Janis Joplin, who performed the song at Woodstock in 1969."

Other popular versions include the 1982 remake by Sammy Hagar and Faith Hill's #1 hit on the Billboard Country charts from 1994. A "live" medley of this song with "Cry Baby" became a hit duet for Joss Stone and Melissa Etheridge when it was released to iTunes after they performed it at the Grammy awards show in 2005.
A heavy metal version of the song was recorded by American glam metal band Rough Cutt on their self-titled debut album in 1985. The song was subsequently released as the second single.
On the debut season of American Idol (2002) third placer Nikki McKibbin sang it for 60's week and then a studio version was made for the "American Idol: Greatest Moments" album.
