Unstable connections: The main interference of wireless are the early 2.4Ghz wireless phone systems. Convert all wireless phones to 5.8Ghz. Offer to upgrade your neighbors phones if needed.
Wireless routers transmit on narrowly defined frequency bands.
The old phones bleed over all the bands.
I had a 2.4 Uniden which kicked all my neighbors offline.
It's a problem.

Security: Ask the router manufacturer which is the most secure method of using the wireless. I am using a Netgear router using the MAC address in advanced settings. The address screens the users. Mac address is hard coded into the wireless adapter on the remote laptop. Mac address can not be synthesized. It's a more secure, and faster connection.
WEP is the weakest security and may be broken into easily. Is there a neighbor hacker around?
Otherwise: you may profile shadow areas of reception with handheld signal instruments. Turn the router off and check for other frequency sources, and users.

A wireless squater will use a common URL ie, gaming, etc.
The router has the capability to block URL's and keywords. Find out which URL the squater is using and block. For example my kids like to use myspace, but I've block it permanently in the router where they can't bypass, not even using a proxy server.

Good luck, I hope I have addressed the problem.

Wireless is just that way, regardless of what the vendors advertise. You might have a device in the building generating interference and making your connections flaky. You might have materials in the building that disrupt the signals.

Wost case, take your wireless hardware offsite and set it up somewhere else to see if the problems follow you.

Another test would be to put a user next to the antenna and let them work there for a while. If they have no connectivity problems then you can assume that you have interference in the building.
