Why not combine your school mascots? Say, your junior high with your high school? That way, it is "growing" up and you're the one deciding what it looks like. You could try that.
Or, if you're really brave, you could do your school team's mascot eating up the other school rival team's mascot..that would be pretty cool...and unique...not sure that anyone else would think to do that.

If those are too bizarre, why not a giraffe..because you know it's a giraffe when you see it...with the long neck, and how about a...hmm, an elephant, because it's nice & fat & easy to work with.
Then, you can call it a girefant! You've got 2 easy animals...and lots of room to work with...no need for perfection...one end is long skinny, the other end is short & stout!

Hope I've given you some helpful ideas, or at least helped you to brainstorm your way to your own!!

Try the body of a lion and the head of an eagle. Or you can reverse it if you want to. Your teacher will like it because it will have its roots in ancient Greece and ancient Egypt. Or how about the head of a great white shark and the body of an alligator?

Good luck and just have fun.
