Tell them the truth about what interested you, and also tie in how some of your skills related to the position, ending with something like, "and I know that with my enthusiasm and transferable skills, I make a great candidate for the position."

At this point, I think I would probably just say that I applied for a bunch of jobs and was just hoping to get one anywhere, cause I really want a job.

Of course, I don't really need a job right now. If I did, I would probably make up some answer about how I'm so interested in what the company has to offer, and I know I'll be perfect for the position, etc.
