I find it amusing when people see someone who is clearly Asian, then may just assume/presume that he or she is Chinese or Japanese or Filipino

I guess it would depend if one was discussing it with the person, such as if someone asked me if I was of Irish heritage, German, etc. To simply assume? I guess, sure, that could be offensive. For someone to say "Hey! are you Italian?" I wouldn't personally be offended, but I would wonder what qualities prompted the question.

Hey Jerry, did you mean LABELS???

And Crazy, "uneducated" is actually ONE word. Ironic isn't it?

People are offended about everything these days so I never worry about this stuff. My grandmother called Asians 'Orientals'. Opening your mouth will offend anyone so either don't speak or take your chances and offend people by accident but so what - they are probably offending you too!
