Homemade Chocolate Covered Cherries -- they're the best! It's not hard, either, so will add the recipe:
INGREDIENTS:
60 maraschino cherries with stems
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating
DIRECTIONS:
Drain cherries and set on paper towels to dry.
In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks -- if you can wait that long!

I learned how to make a real traditional plum pudding some years ago with a hard sauce, and even though I haven't made any in a couple of years I still like that for Christmas dessert.

Please don't laugh but it is jello. When I was little I was brought up in a very poor place with a lot of other kids. Every Christmas we had red jello with some whipped cream for dessert. Every time I eat it I say a prayer for those other kids, where ever they are.

boche de noel, Yule log, similar to a jelly roll, but with ice cream inside and chocolate icing on the outside so it looks like a real log. Mmmmmmmmmmm french Canadian tradition.

generally, cookies, but more specifically, Peanut Blossoms. they're 1st made up (I can't remember all the ingredients except peanut butter and no peanuts). then you take small balls, roll them in sugar (or, I guess, your preferred sugar substitute), and place them on cookie sheets. after they come out of the oven, you immediately put chocolate kisses in the center. very delicious, especially right from the oven...now I want some! :P

Mince meat tarts. My mom use to make them using a shallow 2" tart pan. She passed the pans on to me and I make them now. We eat them for Christmas "breakfast" while we open presents.
