Without getting overly technical, there are only 3 to 4 races of humans - Caucasian, *******, Oriental and possibly Eskimo/Indian. Ethnicity are things like Spanish, Polish, Gypsy, Japanese, Scottish, Cherokee, etc. As a point, Hispanic and Latino, African-American are not ethnicity, they are made up groupings that have little in common with the ethnic groups involved.

Race is biological and ethnicity is cultural.
They really have nothing to do with each other, but people sometimes (incorrectly) use them interchangeably.
For example Japanese, Chinese, and Korean are all distinct ethnicities, yet they are all of the Mongoloid race.
For some reason, we call them 'Asian', which is kinda wierd, considering that we use the same term to refer to other cultures from the same continent.
