I am located on the Mississippi Gulf Coast and humidity is an issue.

In your climate, with the heat and humidity, I would stay away from drywall and vinyl. Drywall will absorb moisture and soon sag. I am not a big fan of the look of vinyl ceilings since they tend to be wavy even when installed properly. Aluminum is expensive and dents easily.

My choice is a beaded tongue and groove ceiling painted white or ivory. You will have none of the problems described above and if you use a good quality paint, it can be cleaned with a garden hose when it gets dirty. You shouldn't have to paint more often than every ten years or so if you use a good quality paint.

Moroccan tent ceilings look cool. Get light fabric and tack it to the perimeter of your ceiling and then gather it in the center of the room with a bun of material. It looks cool and is easy to maintain.

Vinyl soffit. It will come in white, clay and maybe other colors. Check the section of your home center where vinyl siding is sold.
