Pioneers used straw and mud to build walls for a home.
Straw bales would be saturated with water when it rains and like others said bugs will also inhabit the bales of straw.

I saw a program on TV a while back about Auburn University in Alabama, they had a department that was experimenting with different types of materials to build houses with. They were using straw or hay bales coated with concrete I think. Check their website and see if you can find the info youneed there
