The Vegas show book I have states that some shows are "dark' Tues, Wed, Thurs etc. Does that mean the show is not on those days? Thanks to anyone who can explain to a Vegas newbie.

When you see the word "dark". it means the show is closed
In other words, the showroom is "dark" on those days. Since performers must appear on the weekends, they usually have days off during mid-week. (Frequently a show is dark on a Tues and/or Wed)

If a show is "dark" it means it's not happening that night - it's their night off.

Right, it means there are no shows. It's theater-speak since the lights aren't on.
