You're thinking of Vegans. As long as an animal wasn't harmed or killed in the creation of a product, it's fair game for vegetarians. Vegans don't consume animals or animal bi-products (milk, eggs).

Assuming you are nice to the animals that produce it then the main reason is that you don't kill them to get milk! (simple answer, sorry)

More complex answer: All animals produce milk after pregnancy including us (humans) this production of milk 'lactating' continues almost indefinitely provided there is an animal suckling. In humans women can breast feed until the baby is 6-7 years old! So given that a calf is able to feed from grass after a few weeks it is then possible to take milk from the Cow for the rest of the year - without depriving the calf of its right-full amount of milk - simply by feeding the cow more food and keeping it well.

This is the 'ideal' of organic milk production and having seen it in action done properly everyone is happy - calf, cow and human.

There are nasty sides of milk product like taking the calf from its mother and feeding it on milk substitute and using hormones and antibiotics so I think your concern should be about organic (natural, beyond organic et. al.) versus factory farming rather than against milk per. see.

Also you have to think about all the problems associated with drinking soya milk such as forest clearance in South America before determining that the use of non-dairy products is 'more moral' or in some way nicer to animals. Think about all the habitat destruction of Soya production...

Actually there are 2 different types of Vegetarian. One that just won't eat any meat. The other will not eat meat or any food product coming from an animal, which includes milk, eggs, cheese, etc. or anything else made from animals.

Vegetarians are against eating red meat, or killing animals to produce food. Some are ovo(egg), lacto(milk)vegetarians. Some are vegans who eat no animal products at all. It is important for vegetarians to eat a variety of protein sources so that they get all of the amino acids to make complete proteins in their body. Plant porteins are incomplete because they do not contain all the amino acids we need. Meat does. Combintions of animal meat products or 2 vegtable proteins help to get the complete proteins.(macaroni and cheese, peanut butter and wheat bread, rice and beans, tortilla and cheese)Milk is not a vegetarian product but important to many vegetarians.(Protein sources: meat, fish, eggs, milk and milk products, nuts, grains, seeds, chicken and poultry, sea food,)

the animal didn't die.

you're not eating the actual animal (it's a byproduct).

There are other levels of diets, like people who won't eat vegetables that kill the mother plant, so you'll definitely find somebody out there who doesn't drink milk, or eat eggs.
