It sounds like this place is a bit out of the way. Are you catering the other meals over the 2 days? In the U.S. anyway, most people do pay for their own hotel rooms if they travel to a wedding, so I'm sure your guests would understand about paying for their room. Having done that, I would try to have at least continental breakfast and sandwich and salad ingredients and midnight snack things on hand in the venue kitchens so that guests can grab breakfasts and lunches on the go. I assume night 1 you will have some type of rehearsal or gathering dinner and night 2 will be the night of the wedding and you'll have that dinner. I think it sounds like fun. If you ask the guests to pay for their rooms, explain that it's paying for the room, don't blab a lot about the package deal for the venue, and use the money to feed them through the weekend, which most brides and grooms don't do. As long as it's presented nicely, and is tasty and nutritious, it can be simple, inexpensive food, then you can go as nice as you please for the wedding dinner.
