I'm a huge Morrowind, Oblivion, World of Warcraft, and Guild Wars fan but I'm getting tired of playing the online RPGs and want to switch to something that does not require an internet connection. Do you know if any of the Everquest games, or any other game like that, can be played in single player mode?

None of these can be played offline. Even if you could get them too it would not be too much fun. The game is balanced for groups mainly. You would have to rewrite most of the game to make it playable.
Just stick with TES for now. There are a lot of great RPG's coming out soon. NWN2, Gothic 3, the new Might and Magic to name a few.
