Because "white" is a general term. Just like "black" is a general term. There are different..."flavors" of whites...germans, irish, polish, and the list goes on. The same geos for any race.
Now, if you're talking about appearance, many asians have olive skin, as well as some ethiopians.
So you need to be more specific on what exactly who you're speaking of.

Because we are not all olive complected. Some of us are more tan, some are white as sheets just look at Kirstin Dunst. But if you like you could call your self Olive and be sure to say Hello to Popeye for me.

Hee!
Well, people call us American Indians "Red"--but that is true in some cases, my brother and dad both have red skin, of course it is not like a crayola red, but red nonetheless. I, on the other hand, am tan. I guess that's because in addition to being a "Red" person (Paiute, Santa Ysabel/San Pasqual Indians), I am German, African, and English. So when people ask me what my race is, I will say Tan. I am a Tan person. Hee! Call yourself whatever you want.

Usually, olive toned skin is an indication of Mediterranean heritage, Greek, Italian, etc.
I'm white, and don't have olive coloured skin.
That is because my heritage is Germanic, Anglo-Saxon/Welsh and Nordic.

I've never actually seen a green person. Then again, I've never actually seen a white Caucasian, either.
I prefer to refer to people by the origin of their race, by mixed if they happen to be, and by their nationality like so.....

Judging by your name, I would assume that you are Sicilian. Many Sicilians and other Italians are indeed olive-skinned. However, you need to realize that "white" also consists of people of German, Swedish, English, etc. descent. I know no one of German descent who has olive skin.
