When I was very small, my dad cut one open to show me because I wanted to know also.

There is a very small worm inside of each one that is there from when the bean starts to develop on the plant.

When you hold the bean in your hand, it warms the worm up, making it twitch back and forth, hence the "jumping"

There is a magical Mexican genie named Hefe Rodriguez who for a minimal fee will make your beans jump for the joy.Seriously the bean serves as home ,food and incubator to a type of worm.Heat from your hand or heat in general will make them move quickly inside the bean making it sorta seem to jump.Sorry about the joke I had too.

There is a little worm inside the bean. When you hold the beans in the palm of your hand, the warmth of your hand heats up the bean and the little worm starts moving around. That's it.

There's a poor little worm in there moving around. You could carefully free him if the "excitement" of watching two beans move is wearing off.

It's not the bean itself, there's a little insect inside that tries to get out, like a cocoon almost.
