Go to work, and work your butt off. Show them that you can do a great job. When you negotiate on the pay, mention how hard you worked, and that you did a good job (assuming you did, of course). If they do recognize your worth and pay you accordingly, great! If they don't recognize it, you've still got a job. You can go look for another one after then.
Whatever you do, don't just not show up and go look for another job. You never know who the manager or owner of the first place knows. You might apply at some place 10 miles away, and your name will come up between the 2 owners. You'll get a rep. as someone who doesn't give a care, and have trouble ever getting a job.

I would find out what I was getting paid and complete the paperwork before I started working. Otherwise they could say you were not an employee, they were just testing to see if you could do the job, and not pay you anything.

Sounds shady to me. I would work a double shift but not before doing employment paperwork and knowing the hourly rate. That doesn't show any respect. If you have other options, don't work for jerks!

Sounds fishy to me. Pay is normally discussed if you are offered a position before you start work. I would not work a double without knowing my pay, benefits and etc. I probably would not have accepted the role.
