From what I understand it stands for Tyrant. In the original game, the virus was never intended to be used to help people, Umbrella developed it with the specific intent to create the ultimate bio-weapon; the tyrant.

It was called the tyrant virus, and the G virus is called the genesis virus andd the Nemesis virus is called... ummmm the nemesis virus. The T virus was named tyrant because the creatures made were all supposed to be like the tyrant monsters, and were made as biological killing weapons that were easily mass produced. The g virus is named genesis because it was a changing point in the whole creation of the virus family qand that eventually lead to the nemesis virus and the T (tyrant) Veronica virus
