No particular order here:
Ernest Hemingway... practically any of his most famous creations (sometimes it feels like it's the same great story all over again).
Leo Tolstoy, "War and Peace" (being Russian I just have to mention that; plus, it's a really great book, in my opinion the best example of literary realism in the world)
John Steinbeck, "East of Eden" (an amazing blend of modernist realism and pseudo-religious symbolism; undoubtedly Steinbeck's most ambitious novel)

"Illusions" by Richard Bach - seriously - I've bought over half a dozen copies so far and have lent them out to family and friends who have in turn passed them on the others after reading, and, although everyone includes it but SO few actually have read it: the Bible.

As to the third: ANYTHING by Anne McCaffrey!
