What they do is request a letter from the State Patrol stating that they do not (or do) have a record on you. They may also request an FBI check of national records. Depending on the job, if these two aren't enough, they may have to ask questions on your neighbors and so on, but this is usually for security clearances.

If you have a record of any kind, it's best to put it down on your application, because if you don't mention it and they check your records and you have an arrrest somewhere, you'll probably not get the job.

Depending on your work history and age they may go back depending on the job you are looking for 10-30 years. Especially in the Bank, Finance, Government, TSA, etc Industries.

Don't lie, don't hide, don't cover up.
HR will check the info you give them. So if there is an obvious gap in a work history it raises a red flag.

What shoudln't I tell them on an application?
Give a good list of reference names and numbers, teachers you liked, ministers, family doctor, parents friends who are lawyers, cops.
Give phone numbers and names of people you trust

Most of the time they will check the last three jobs you did. Most of the time they are looking at your consistency to deliver work assignment on time, you character and the reason why you were fired. Also they are verifying if you worked in that listed firm. I am of the opinion that if you have anything to tell you employer you should do coz if they do discover, it can be a lead to dismissal on providing false information
