Well, if I constantly feel analysed by someone, it gets annoying. I feel as if I am being judged and have to monitor everything I say or do. I also just want them to relax and enjoy the time they're spending with me, rather than taking such an impersonal stance.
Still, on the general level, if it's not one of my significant relationships, my reaction is usually based on why I perceive someone is analysing me.
Some people do it because they want to get a handle on others to manipulate them in some way. Usually these people aren't good at analysing anyway; they tend to read far too much into people's words and actions, and usually come up with whatever interpretation will best suit them at the time.
I usually avoid such people, if possible, since they're not prone to accept corrections of their "analysis" anyway. And if I have to interact with them, I usually just keep things as casual as possible and take their judgments lightly.
But there are some who do it because it's simply how they process things. They're not great at interpersonal interaction, they're born thinkers, and how they interact with the world IS to break it down and examine it -- people included. While they can afford to develop their interpersonal skills, it's simply not their strength and they're quite clumsy at the beginning and want to avoid the discomfort.
Such people need to be given some patience and a non-threatening environment, where they can feel free to interact on a level other than the intellect. Most of them don't know how to make small talk. I simply would not take their analysis personally, because it is not meant that way, and their ideas can sometimes even be helpful if you can simply take them at face value.
In the psychological fields, they would do extremely well in research. And if they can learn to develop the ability to relate on a human level, they have a lot of potential to counsel others since they are good at reading motivations.

Ignore them, as they are not worth it. You are a brighter person than they are. So shrugg off there analysation techniques and tell them that they should judge themselves before they judge you.

You do the same thing to them until they get the point. Hopefully they will change their manner or you need to drop them as a friend. No one likes to put up with that! It makes you feel uncomfortable as well as put on the defensive.

With compassion and understanding.
These people who analyze you are very lost themselves. They find that analyzing you gives them some sense of control to help compensate for their own shortcomings.
Realize this, and have mercy on their poor souls.
