It goes back further than that.....Charles Mingus wrote a tune called "Goodbye Pork Pie Hat" as a tribute to the late Lester Young. Mind you Lester Young's Pork Pie hat was a lot flatter than those worn later by the likes of Madness. Perhaps he'd sat on it under the influence of some substance or other. The 80's bands should have followed his example.

But the real reason he wrote it is because Lester Young "The Prez" had passed away. Lester Young used to wear a pork pie hat (as described by the other answers). Good Bye Pork Pie Hat is a tribute to the Prez. Rahsaan Roland Kirk also recorded the song. He added lyrics to it. The lyrics mention Lester Young.
