mt everst is a huge mass resting on the border of of tectonic sub-plates. There are a lot of forces which balance this huge mass. When everst is suddenly removed, the forces lose the states of equilibrium, and may cause a devastating earthquake

I don't even know what happens when you renove a mountain.

There would be earthquakes as the crust readjusted itself to deal with the removed mass. No other phenomena come to mind.
