Shopping, clubbing, dancing, drinking, bowling, hot air ballooning, watching sport, playing sport (Golf mainly!!!!!!), going to the beach, sightseeing, museums, art galleries, antique shopping, cultural days, lazy days, cheesy dinner shows, natural parks, animal parks, water parks, weird and wonderful attractions..... so much to do in Orlando apart from Disney & Universal.
not sure what you are looking for or your "age range" ;-) but here goes nothing ............
This is a useful link for possible ideas which you could then research a bit more

If you are staying on site at one of the parks either Disney or Universal, there is quite a lot to do "on property" if you think outside of the theme parks! On Disney there is a lot of recreation facilities, water parks, nightlife and other fun stuff!
Quite a few different Malls, but a Mall is a Mall is a Mall wherever you are in the world!
Florida Mall, Mall at Millenia, West Oaks are just a few.
You could learn how to Water-Ski and a whole bunch of other things too ...
http://www.orlandowatersports.com/ - there are lots of places like this but this is one of the biggest I believe.
Or swim with dolphins at Discovery Cove - yes a "theme park" so to speak, and yes its pricey

You could do swimming at Kelly Park / Rock Springs which is a river that comes out of a cave - trust me, its better than I make it sound

Hopefully you are over 21 so can head out for a night on the town -
In DOWNTOWN Orlando
http://www.downtownorlando.com/
Have a look at this link and you will see the names and addresses of the Bars & Clubs in Downtown Orlando.
Depending on what kind of Music you like there is something for everyone. Orange Ave has a lot of Bars along it.
Independant Bar is good if you like a bit of alternative 80's stuff. They have a few different rooms, including an outdoor patio and fresh Pizza slices! yum!
Bar-B-Q Bar next door is a good place to hang out and get a beer
Latitudes & Chillers are places to go if you like the young college scene - lots of bodies, beer & bump n' grinding! It has an rooftop bar as well which is great fun.

Wall Street Plaza area has a whole bunch of different restaurant clubs & bars which i have only been to once or twice but has a lot of choice.
BEACHES:
If you are driving - you can get to some great beaches within 1hour - 1 1/2 hours from Orlando.
East Coast - Cocoa Beach - not the greatest beach in the world but worth it to say you have been as everyone has to go to Cocoa once!
West Coast - beautiful White Sandy beaches here on the Gulf side. The water is warmer and calmer.
St. Petersburg & Clearwater, and a little bit further is Longboat Key & Sarasota.
Of course if you wanted to got that bit further you could always venture to South Beach for the day/night - good times had by all!
well, enjoy, I lived in Orlando for 3 years and there is a whole bunch of stuff I never got to do ... if you look away from Disney / Universal - there is another magical city waiting to be explored!
