You can't make a turtle eat. If he is shedding, he naturally doesn't want food.
He needs to see a vet. With reptiles it's hard to tell if they are sick, it's better to be safe than sorry.

How long have you had him and does he have a proper setup? What temp is his basking spot at and are you providing UVA and UVB to him? Map turtles eat crawfish and such in the wild, with some vegetation but fruits and veggies are not their main diet. You can try providing him with some worms as already suggested, but the first thing you'll want to check are his temps and his water. If the temps are too low (a basking spot under 90 F) he could lose his appetite. Get a good UVB/UVA heat bulb get his temps up, let him finish his shed, try to coax him with a few worm and see how it goes. If he doesn't come around find a local vet.

Map turtles do not eat veggies or fruits except as a minor part of the diet when they are adults.
Not eating is usually due to things like:
- low temps (aim for 75-80)
- dirty water
- small tank
- stress
Go to a good care site like below, check the basic cares and fix any glitches, and see how it goes.
Also- clean everything well, and give some live food a try- small fish, worms, etc.

I have a pet turtle too and usually around this time of year, she eats less and less until she finally goes into hibernation.
If your turtle doesn't get better soon and you're still worried, I would find a vet that is willing to treat him and see what's going on. Good luck!

i think of you should take it to three form of a veterinarian that treats turtles and different animals. Take her as quickly as you could. My sister had a guinea pig and did the comparable ingredient. She not at all ate or drank water and one morning had a seizure and died. do not enable that ensue on your turtle. i does not pick it to ensue on your turtle the two. solid success!
