Depends in what sense. Many things must sense a giving object or electrical charge to work so this could date quite far back without an absolute answer.

On a car they are used to monitor the engine management,in industry there are many uses for sensors,robotics,cooking etc.There are many types of sensors too,heat,cold,pressure etc.Dont know who invented them though,probably not one person but many.
