I tell them that though I can take a lot of pressure and handle stress, there is a breaking point and I do explode. The times comes for me to pull every one into an office that is pulling me in different directions and make them decide which project is most important...what I feel is most important and they feel is most important are two different things. Though I did just have a prospective employer call an old employee and she said, "Jen takes on great responsibility and makes everything she does look easy. If she has any weaknesses, she never showed them in the six years I worked with her". How freekin' awesome is that?

Nothing that is a general statement which they hear over and over again, such as I'm too nice, I'm too organized, I'm a perfectionist, etc. Try something that is not required to complete the job (or is general knowledge about you) and will not affect your chances of being hired on. Then let them know what you are doing to correct the situation. Some examples are: I'm not bilingual and although it is not a requirement for this position, I feel that becoming bilingual is important in today's globalization of the workplace. Since I have identified this as my weakness, I am working and correcting this issue by teaching myself ___. Whatever you do, do not lie though about you are correcting the issue. If hired, the interviewer may follow up on the interview through casual conversation. For example, "Hi __. How are your ___ classes going?"

I am hard worker, but I have to have 6 martini lunches to get me through the afternoon.
Actually, be honest about your weakness, but offer ways that you are presently working on improving them.
If you don't think you have any weaknesses, perhaps your weakness is your ability to accurately judge peoples attributes...including your own.

Play up whatever your weakness is. Mention that you're working on making it better. For example, my weakness is being late. So, what I say is this: "My greatest weakness is being late, but I've learned, through trial and error, to get up earlier, and to leave earlier, so I arrive at my destination earlier."
Simple!

I sometimes try to take on too much responsibility. The follow up question- explain what you mean...Well, I am very success oriented and I tend to take on a lot of work that ends up requiring me to put in extra hours to complete, but I usually feel pretty good about getting it done, so it does have its silver lining.
Good luck.
