by intense study of documents and relics from the time. pictures will tell them what people looked like, how they dressed etc., writings will tell them about politics, economics and current affairs, household appliances will tell them what and how they cooked and ate, bones will tell them about diseases people might have suffered and so on. to really recrate the past accurately historians should this always use archeological research to back up their findings.

In another vein, historians are actually not very good at predicting the future. They are, however, good at predicting the past.
