At the present time it is a buyer' market, the supply of cars outstrips demand, so you're on a loser in the first place.
Secondly, as autumn is here, and winter approaches, you have chosen exactly the wrong time of year to sell a convertible car, no matter how 'desirable' it may be, and people are now waking up to the idea that since GM took over Saab, the 9-series are now just overpriced Vectras.

You will NEVER get £5k for a 1999 Saab....convertable or otherwise....it's just another G.M. car with a better body!!
Best you can expect is a private sale - £3 - 3.5k, dealer will offer around £1.5 -2k cash or £2 - 2.5k P/X (Don't believe Parker or Glass guide books!!)
I'd advise trying to get a part exchange privately...advertise in local papers / Ebay / supermarket boards.

Anyway, being something of a used car guy, I offer the following :
If it is good nick, and as you describe it, well, probably around 2k to a dealer.
I think you are being a tad optimistic.
Sell it via a private ad in the locals would be my humble advice,

Sell convertibles in spring, when they are popular,
buy convertibles cheap in the fall when no one in their right mind is going to buy one. I reckon £ 3.5 K more realistic as a cash sale
