does boiling cause it to lose it's sweetness?

Where did you get the idea that starch is sweet? It is not.

Starch does not taste sweet because the molecule is too large to interact strongly with taste buds. Sugars have a similar composiiton to starch but are much smaller molecules that do react with taste buds. Ordinary boiled potatoes contain considerable starch and little sugar so they do not taste sweet. I have heard that you can encourage the potato to convert some of its starch to sugar by refrigerating it overnight before cooking. Give it a try and see if you can taste the difference.

The boiling process does not get the potatoes hot enough to convert the starch to sugars.

Starch is not sweet, sugars are. When starches start to digest in your mouth when the enzyme ptyalin mixes wth them you can start to taste sweet as the starch is broken down into sugars.Further digestion takes place in your stomach and small intestine.

Only simple carbohydrates taste sweet. Complex carbohydrates do not.

maybe the potatoes are so hot when you eat them that you can't taste it...LOL
