Sorry, but I may not select the best answer for these questions, because they are pretty much personal choice.

ps. I don't really consider those salsa competition stuff and performances that they showed on tv are really salsa dancing. But you can list those if you want.

I like salsa on 2. I like Mambo better than salsa. I know it is not technically true, but it feels to me like salsa on 2 works more closely on clave.
I relly enjoy watching mambo in ballroom competetion (yes, I know you said you don't like 'em, but you asked us what we like) I couldn't find anything on youtube that I'd be totally crazy about, but this is an example: http://www.youtube.com/watch?v=V93zHz3F7sI I bet it looks pretty hard to copy! In this one, I like that the woman is pretty fluid, not all elbows and shoulders like you might see way too often in less-than-professional ballroom.
My favorite dancers of Mambo are May-Ling Hutchins and Gleb Makarov. There is a picture of them here: http://www.dance-forums.com/album/showphoto.php/photo/715/cat/all/si/gleb%20makarov I've seen them do this move on the dance floor - looks pretty impressive.
I don't have a favorite song or salsa music performer.
If you ask me what I value the most in salsa dancing - that would be understanding the music, dancing on clave.
