Few people have had the experience of waterskiing, but those who have would say it was unforgettable.

Really you need to state what you will be addressing in your essay, like:
Waterskiing is a fun sport, but a person need to take certain steps to ensure safety.

If it is a narrative, depending upon the grade, if elementary, then something simple as "have you ever been water skiing?" would suffice. If it is for a higher grade then a couple of descriptive sentences about the look, feel, sensation, etc. would be best.
Example: "There is no greater feeling than when you are gliding thru the water on skis".

If a persuasive essay, the author can draw a comparison to another swimming or skiing sport and set up the argument that water skiing is better because.....
