Wikipedia has at interesting report on doping and the olympics:
Apparently one of the early egregious doping cases involved a runner given strychnine and brandy DURING a race. The only death that has ever occurred in the olympics involved an athlete who had amphetamines in his system. And there was a major scandal when a number of German female atheletes had been unknowingly been given anabolic steriods by their government for years.
Once rules were enacted, the first athlete to break them was 'doping' with alcohol. Stanozolol is also listed as a prohibit drug. In 2006, twelve athletes were found to have been doping their blood with... blood. They were suspended for five days due to excessive hemoglobin.

Beta-blockers - lower the heart rate - make you relax
Cortisone - masks pain
Steroids - help build muscles
Basically there are a large variety of available drugs, the use of them to relax the athlete in accuracy events (shooting or archery), to mask pain in any activity so that the athlete can carry on through an injury.

EPO - Eythropoetin...increases production of red blood cells...more red blood cells, more oxygen carrying capacity of blood...less muscle fatigue.
Testosterone....increases muscle mass
Caffeine....well yeah...I'm sure thats pretty obvious
