Hypnosis/Hypnotherapy can help a person do a lot of things. It works on appealing to the subject's subconscious.
However, it can only help affect change where there already exists the desire to do so. And it doesn't affect body chemistry (you will produce oestrogen...) else it should have been an ideal cure for Diabetes.

Using hypnosis? NO. Hormones can begin to change a lot of things on the body (people born male can grow breast tissue, the penis will become smaller, pretty sure body hair stops growing, and body fat gets redistributed to be shaped more like women are). If you're talking about changing how people identify: talk therapies really can't change someone's gender identity. That's why people diagnosed with GID are usually eligible for surgery: less "extreme" measures just don't work. In earlier years, the goal was to try to help the person cope with living as their born sex, but when people started realizing that that wasn't helping anyone, other options were explored.

I believe its all in the head. There have been medical studies where the doctors give smokers pills, some real some sugar pills. A lot of the people taking the pills said it was successful. Even those on the sugar pills.
If you think something will work, you can lead yourself to believe it did work.

I think you are speaking of sex, not gender.
Sex = anatomy and/or chromosomes such as male xy, female xx and several intersexes (there are over 30 human sexes total)
Gender = social identity.
