Depends on your teacher. Some like to dissect eyes, others don't.
I prefer not to dissect eyes because it upsets some of the students and it doesn't really show very much.

in like 5th grade we dissected a cow lung. um, it's not really "these days" anymore, sadly that was good lord 16 years ago. anyhow, the point to my story is that in the 16 years after that (highschool, bs biology, phd microbiology) i never dissected anything.

I took it last year and I had to dissect a sheep's eye. It depends on what school you go to.

it's going back a birt but at school we did a frog and rat. At uni i disected all sorts of things from cockroaches to pidgon. But bulls eye- nope
