It's not thay they only have one name, they use their nicknames given to them as children or just their name. For example
Nickname: Ronaldinho
Full name: Ronaldo Assis de Moreira
Nickname: Robinho
Full name: Robson de Souza
There is some story behind it and it's long and I don't want to explain it lol but here's what I found out:

They have several names. For example, Ronaldo's full name is Luiz Nazario de Lima Ronaldo. If an announcer had to say his full name each time, it would take up too much time to call the play. Hence, people in the game shorten the name down to one word. We do not see this problem with US or other players, where there is usually only two names (example Donnovan McBride). For another example, consider the current Footballer of the Year - Rolandinho - Ronaldinho Gaucho de Assis Moreira.

the Brazilian usually have long names so players are usually known by their famous names worldwide like Kaka, Fred, Ronaldinho, Robinho & so on.

They seriously have the longest names out of any football players. How could you fit their whole name onto a jersey?? Best come up with a surname or what have you.

It's a tradition of Portuguese-speaking countries. If you note that goes for Portugal and Angola too. Players from Portuguese-speanking countries use nicknames instead of last name because Portuguese last names are too repeated.

I agree with the others, it's because they have long names and those names on their shirts are mostly their nicknames.
For example, Ronaldinho's name is Ronaldo, Kaka's name is Ricardo and so on...
