Welcome to the area (I'm in Dublin)! Unfortunately, it is not the best place around for hunting and fishing enthusiasts or target shooters like myself.
There is a Big 5 sporting goods on Dublin Blvd, between Hopyard Road and Foothill/San Ramon Blvd (just west of I-680) for generic fishing and hunting items, but it is Big 5, not a specialty store. Of course there is also the Wal-Mart at Hacienda and Dublin Blvd -- not much there and not the highest quality, it's a Wal-Mart.
There is a surplus place in Livermore called Dom's Surplus, lots of good outdoor (camping, backpacking, etc.) stuff but no fishing or hunting gear specifically that I can recall.
Travelling further afield, there is a very large gun store in San Leandro called Trader's -- I seem to recall that they carry a lot of hunting supplies as well but I'm not sure (I haven't been there in years for that matter).
There was also a store called Western Outdoor (if I remember correctly) in Oakland -- lots of hunting and fishing and shooting gear of all kinds, but a bit farther away than you may be looking for. I haven't been there in years either, so it may not even still be around.
Alameda County "went ballistic" (pardon the pun) on gun dealers about 15 years ago, and as a result many sporting goods stores went under. Contra Costa county did about the same thing, though not as extreme. Today the nearest stores that are specifically hunting and shooting and fishing related are in San Jose to the south or Stockton/Tracy/Modesto to the east.
The "Crossroads of the West" and "T & S" shows used to come through the Alameda County Fairgrounds several times a year, but since the county's attacks on gun owners they have moved out to Stockton and Tracy. A web search should turn up their schedules. They may also come through the Cow Palace in San Francisco (they used to), but given how liberal that city has become I doubt it. I believe they still come through the San Jose area regularly, but I never seem to see ads for them until after the events.
There is still a big sport fishing show that comes through the area once or twice a year -- I don't think it is at the Fairgrounds, I believe it is held at one of the boat dealerships near Hopyard and Dublin Blvd. That would probably be a good place to make some connections in the fishing department anyway.
