Hitchcock was such a brilliant director with such a consistent track record that it's hard to choose just one, so I'll list my top 10 in chronological order of release:
Suspicion
Shadow of a Doubt
Spellbound
Notorious
Rope
Strangers on a Train
Rear Window
Vertigo
North by Northwest
The Birds

I've always liked The Birds best, since I was a kid, but I like Gaslight too. (That was Hitchcock wasn't it?)

Rear Window was good, Psycho made me not want a shower again and The Birds made want to carry a shot gun everywhere I went.
