Corn... Maize... same thing... and certainly the principle grain (yes it is a grain) in Mexico as well as the southern USA. Corn is native to North America and used as a staple grain by many North America cultures. It is eaten whole and / or ground into a flour (Mesa Harina) used to make flat breads... tortillas.

It is also one of the Three Sisters (Corn, Beans, Squash), and as such has a special place in the folk lore of these cultures. Mexico of course is part of North America.

Corn is a grain and is widely used as a staple in Mexican food. It is a common scene that the evening food preparation begins by taking a scoop of dried corn kernels from the pantry (often a plastic bucket beside the sink). The kernels are ground into meal, and made into masa for tortiallas and tamales.
