The most interesting and rich to me is the cultural diversity of Jerusalem. Contrast the cultures that claim the city as the center of their religious beliefs. The Dome of the Rock having been built on the Jewish temple is a specific nexus point.

Then look at the effect that the Jewish State has had on the city and the Palestinian people, even the Muslim World in general.

Try just going to a shopping mall, and just sit off to the side & observe the different people and different groups...how they're dressed, how they interact, what they bought, etc. Take notes!
if nothing else, it might give you an idea for something else to write about.

Another idea:watch a movie or better yet a documentary that might have an appropriate topic pertaining to cultural diversity, and write how you think that movie or documentary pertains to cultural diversity. (you can usually borrow documentaries free from the library) Once again, take notes as you are watching.

my last idea is to just watch the news on tv..you'll probably catch some sort of a "human interest" story that might be appropriate, and write your thoughts about that. The only bad part about that might be that the story you pick might be too short...in which case you can find out more about that particular story online, or go with that same type of story but maybe one that has a little more "meat" to it, that would be easier to write about...

America is the most cultural diverse nation in the world make a paper on how our cultural diversity gives us a advantage over other countries. Think of all the different peoples views, training and expertise all coming together to form the perfect answer
go off that and your a shoe-in for a A and probably a publication

how about taking a look at some of the common things that we do in America in every day life and looking at how those same things are accepted around the world:
- giving bouquets of flowers- some cultures from upon giving plants that have been cut already-essentially they are dying
- personal space- how much do Americans need vs those around the world
- family life - Americans typically have an immediate family of mom, dad, kids living under the same roof; many other cultures expand that to include grandma, grandpa, aunts, uncles, etc
- work ethic- Americans strive to be individualistic and are competitive; many other cultures adopt the idea that it is a team effort and work in cooperation with others as a team
