Just create a new league and recreate the rosters, and keep a paper copy of how the week one results went. Email that information to the owners.

I've never tried it, but if you transfer the teams to yahoo and set the scoring system, they (yahoo) might calculate the week 1 data for all the teams already, and start the season from week 2 - on.
