Check out a website "The Amish Experience". They do a multi-media presentation and a great guided tour. It's in Intercourse, PA.
For dining, I would recommend Shady Maple Smorgasbord in Blueball, PA.
My wife and I take foreign exchange students on this tour every year. They do a good job.

If you are looking for something that's really Amish, instead of all the tourist traps and attractions, consider staying on a real Amish farm, with no electricity Here's information on one that sounded really interesting/ http://www.padutchcountry.com/member_pages/Starlit_Acres_Amish_Farm_Bed___Breakfast.asp
At Schrock's Amish Farm you can take a ride in an Amish buggy and much more. Here's the site, which includes a video of the farm.

Hope that helps!

Leave your camera at the hotel room, because the Amish really HATE people taking pix of them and their lifestyle(strictly enforced in Lancaster County), just bring cold cash for their jams, jellies, breads, and antiques(?)...

Miller's on Route 30 is excellent, but it is not quite as "authentic" as a place like Good'n'Plenty, where the still seat and serve you family style. If you don't like eating with strangers, though, go to Miller's.
