you could create a new system for ordering in cleaning supplies and maybe base your questions around that system............
For instance order / stock and flow grid
then you would need to know what products they used, was it only from one company....etc etc if so was there a minimum order, remember all that they order in HAS to be kept someplace.

I guess your going to computerise the hotel paper system.
So you need to know:
- How the booking system works
- What other systems they have in place (cleaning rooms etc)
You'd be better off asking the people who do the jobs and how they think it could be better.
