Several reasons:
= He/she did not mean it - deliberately lied
= The underlying circumstance(including you yourself) has changed
= He/she was drunk or under some intoxicating influence
= Another (better) "world" appears
= He/she is testing your reaction
= He/she is trying to experiment with life without you
= He/she is being stupid, risking a dull and harsh world
