the use of the word "exchange" and "substitute":
if i want the new coat and through the old one away,it should be "exchange the new coat for the old one" or "exchange the old coat for the new one"? Does "substitute" have the same use as "exchange"?Thanks

I agree. exchanging would indicate that you give something away and receive something in its place. Substitute would be putting something away & replacing it with something else. As in substitute teacher! ha ha.
OK
The one you want is B.

Exchange is changing places. Someone letting go something to some other to get something else from the another.
Substitute is a new thing that comes in the place of the existing thing (The thing that is exchanged or put in place of the old or existing thing should replace the lost thing having the same qualities of that which it replace or substitutes) some times there will be near substitutes but not real substitutes-like sociology teacher is not a substitute for political sciences teacher, but he or she is near substitute and if has similar experience – become a good substitute.

In Exchange the goods exchanged will have different values, but when they are exchanged by the parties both of them will have some acceptable price and function or value that is satisfied to both or for some it is bad bargain depending on the urgency of need or compulsion.
Exchange may also result in good substitution for the lost goods. Hope I am clear and not confused you.
I want to exchange A for B.

You have A and wants B. So you give A to the person who got B and then you got B. In this case I dont think you can excange excange with substitute. Substitutes is used in soccer or ishockey when you change a player in one position with another. Hope it helps! Johan
