What do both of them mean in simpler terms anyway?

The difference is easy.

Defying gravity. We know about gravity and how it works. If you throw an apple up, it falls...gravity. Now, defying nature. This would be doing something, or whitnessing something that can't be explained based on our current knowledge, or something we haven't learned about or studied yet. For example, why does spontaneous human combustion happen?

Of course, just my opinion.
