I would suggest a simple experiment to figure it out.
First, set a null hypothesis, which may be: "my fart does not escape from the zip-Lock bag at all".
Then, sample the fart mixture every hour for the first day, and then daily till the end of the month. Be cautious that the sampling procedure does not affect the fart partial pressure in the bag. Then analyze the equal volumes of the samples by gas chromatography and measure the area of the main peaks.

The molecules from the fart will eventually settle on the bag and the smell will be lost. How long, you will need to do the experiment yourself, try 24 hours for a start.
