well, if you want a full history of the invention of the refrigerator, than check online with a search engine. But, as a quick answer, because it gave society the ability to cool and store foods for extended periods. Before, the way to save meat was to load it full of salts and spices. Even then, it would last too long. Dairy products need to be cooled to prevent them from going bad too fast. Basically, it lets us save food for longer times.

Without refrigerators, we wouldn't be able to buy large quantities of food to eat, so we would have to buy food from local suppliers and farmers, supporting our communities.
Without refrigerators, the large grocery chains wouldn't have the power to force food prices down and there would be a better distribution of people in the rural areas who have some control over government decisions on transportation and energy, so our government might not be as susceptible to the large oil companies and worldwide suppliers who make us afraid to lose our 'lifestyles'.
Without refrigerators, people would think more seasonally and take a break in the hot summer, slowing life down just a little so that production and the economy aren't the only things to be concerned with.
Oh, I'm sorry, I'm pretty sure that isn't what you wanted. It's what I thought, though.
